Ingredients
12 oz John Morrell Loop Smoked Sausage 8 oz Shrimp 1 oz Extra Virgin Olive Oil 1.5 T Garlic 1 ea Med. Onion (large dice) 2 ea Green peppers (large dice) 1 cup Celery (large dice) 2 - 28oz can Diced tomatoes 1- 49 oz can Chicken broth t.t. Cayenne 2 ea Bay leaf 1- 14oz box Long grain white rice
Preparation
Sauté onions, garlic, peppers and celery in oil, add sausage and continue to sauté. Add tomatoes, chicken stock, bay leaf and cayenne and simmer on low for 30 min. Add rice and cook till tender. Finally add shrimp and simmer until shrimp is cooked, approximately 4-5 minutes.
