Fire Up the Grill and Make Your Summer Sizzle!
John Morrell Celebrates National Grilling Month with Tips and Two New Recipes

CINCINNATI, Oh – As temperatures start to rise, families and friends gather outside for a definitive summer activity – grilling. The meat will sizzle, the friends will laugh, and every chef will aim for the perfect flame-broiled flavor. This summer, in celebration of National Grilling Month, John Morrell has grilling tips and new recipes to make the next cookout a success.
The first step in the summer grilling adventure is deciding between a gas or charcoal grill. In recent years, gas has become more popular because it replicates the charcoal flavor but can be lit and used immediately. Charcoal must be lit 20 minutes in advance and allowed to burn until the coals glow red. If using a charcoal grill, hold a hand, palm side down, about six inches above the coals. If the hand can be held longer than 4-6 seconds, the grill is not hot enough to cook the meat safely (from the Food Safety and Inspection Service).

After the grill is hot, it’s time to start cooking. Meats such as hot dogs, brats, hamburgers, steaks, or pork chops can be placed in direct heat above the flame. Then follow these tips for proper cooking:

• When grilling thin foods like hamburgers and pork chops, grill each side for 3-5 minutes. Turn the food only once for the best look and flavor.

• When grilling fully-cooked meats, like John Morrell Bigger than the Bun Smoked Sausages or John Morrell hot dogs, heat for 4-8 minutes or until steaming hot. There is no need to initially boil these.

• When grilling a thick cut of meat, sear each side for 3-4 minutes to create a flavorful crust. Then move to indirect heat to prevent charring and keep the lid closed until the inside is properly cooked.

• Use a long-handled spatula or tong, not a fork, to turn the meat being grilling, since piercing causes the juices to escape.
• When the meat reaches 160°-170°F, call the family and enjoy the flame-sizzled creation.
